Instant Fuss-Free Risotto
Cook creamy risotto in a Hi-tech clay pot multi cooker. Start with warm broth just as you would with a stovetop risotto. Clay pot makes food healthy and maintains pH balance.
Ingredients:
1. 2 tbsp butter
2. 3 cups diced mushrooms
3. 1 cup chopped onion
4. 1 tbsp fresh thyme leaves
5. 1 ½ cups Arborio rice
6. ¾ cup white wine
7. 1 quart chicken stock
8. Salt and ground black pepper to taste
9. ½ cup grated Parmesan cheese
10. 2 tbsp butter
11. 3 cloves garlic, minced
Methods:
Step 1:
In a medium saucepan over medium heat, heat broth.
Step 2:
Set Hi-Tech Clay pot multi cooker to sauté and melt butter. Add onion and cook until soft, 5 minutes, then add garlic and thyme and cook until fragrant, 1 minute more. Add rice and stir until toasted, 2 minutes.
Step 3:
Deglaze pot with wine. Cook until most of the wine is absorbed, then turn sauté function off.
Step 4:
Add warm broth and place the lid on a clay pot cooker. Set to Manual, high and set time for 5 minutes.
Step 5:
Turn valve to quick release. Remove the lid and stir in Parmesan. Season with salt and pepper.
