Cilantro Lime Rice
Ingredients
- 2 cups of rice
- 4 cups of water
- 2 tablespoon butter
- 1 tablespoon coconut oil
- A sprinkle of ground cumin
- ½ teaspoon ground black pepper
- ½ bunch cilantro, chopped
- ½ lime, juiced
- 4 green chilies for garnish
Method
- Add the rice, water, butter, cumin, black pepper and oil into the clay pot.
- Close, seal and press the rice setting on the Clay Pot Cooker.
- After the rice is cooked, allow it to sit for 15 minutes before opening the clay pot.
- Stir in the lime juice and cilantro just before serving.
- Serve chilies on the side as a garnish.
